After last weeks not so soup-er sunday, I knew I need to get to work cooking with my tomatoes. I had 3 lbs of tomatoes in my fridge waiting to go bad. I decided to attempt homemade tomato sauce. After googling for hours, I settled on a recipe that seemed simple and would also allow me to use up a few other veggies I had in fridge that were also waiting to go bad. I found the recipe at allrecipes.com.
10 ripe tomatoes
2 tbsp olive oil
2 tbsp butter
1 onion, chopped
1 green pepper, chopped
2 carrots, minced
4 cloves of garlic, minced
1/4 cup chopped basil
1/4 tsp Italian seasoning
1/4 cup Burgundy wine (I left this out)
1 bay leaf
2 stalks of celery
2 tbsp tomato paste
The best part of the entire recipe was boiling the tomatoes, peeling them, and squeezing out the seeds. It had me laughing. There is something entertaining about squeezing seeds out of a tomato. Don’t ask! I’m not sure. It was just fun. I then blended up the tomatoes in the blender, add the tomatoes to the sautéed veggies, and cooked it for hours. My 10 tomatoes didn’t make nearly as much tomato sauce as I was expecting. I ended up adding a can of crushed tomatoes (blended) to the pot so there was enough to make sauce.
The jury is still out on the final verdict. Christian had some tonight over his chicken breast. I’m avoiding it 🙂 Christian did enjoy his dinner. One night this week, we will have spaghetti (with a back up plan) for dinner.
In addition to my soup sauce, I also made double chocolate pumpkin cake with pumpkin butter cream frosting. The jury is in on this recipe. YUM! I’d highly recommend making this cake this fall.

Although my cake does look identical to the picture, I was tired by the time I got around to frosting my cake. My version isn’t pretty, but it tastes good!
Although this post sounds like I had a productive Sunday, I’ve actually been quite lazy all day. I got very little sleep last night (maybe 3 hours total). The hubby went out last night, and I never sleep good when he’s gone. He also biked to his friend’s house, so I worry about him being on his bike during the dark. I managed to fall asleep for about an hour before he got home, but I was wide awake from 1:30 until around 4:00. YUCK! To top off the very little amount of sleep, I’ve also had an upset stomach today. I’m actually quite surprised I managed to cook anything at all. (I cheated and made the spaghetti sauce last night, thank goodness.)
It was another beautiful day in Virginia Beach. I couldn’t say no to a quick trip to Mt. Trashmore (again!). This time I left the running shoes at home and was joined by Christian and Cole. It was a great day to fly a kite and watch the boys run around outside!
